It depends if you mean from a purely technical standpoint, just sheer intensity, or drumming that's fun and creative.
Unironically I still think the best drummer from a technicality perspective is Danny Carey. Yeah he plays for Tool but he has a hell of a range and seems to be able to do faster more aggro drumming and then the more tribal rhythmic shit, and his use of the electronic pads is pretty unmatched.
Otherwise if you want actual metal and more intensity, the DsO drummer (just rumoured to be Hasjarl's brother) is pretty much at the peak. Great mix of impressive blasts, creative rhythms, and just technically great.
My favourite for drumming in a fun way is the guy who basically plays most of the instruments in Cobalt. Obviously Darkside should get a mention too for similar reasons but I think his drumming is 80% uninteresting then 20% amazing. He peaks hard but not very often.
For me it will always be the DsO drummer. The trilogy and Synarchy have some of the hardest drums I've heard, and even when Furnaces is less intense he's still doing lots of cool rhythms and cymbal work to keep things impressive and difficult.

The more you learn about something, the less exciting and mysterious it is. I've been into extreme metal for nine years and still have a lot of enthusiasm for it, although that enthusiasm waxes and wanes. You're probably older and been into it longer than me, but I'll share my thoughts if it helps.
I can't show you how to only find good metal, but I can say with time you'll learn to filter out mediocrity by both merit and instinct, and your changing tastes and a need for new experiences will lead you to metal that's at least different if not new or exciting. It also helps to revisit metal albums you didn't like the first time, and explore other genres of music just to counterbalance your library and have a better understanding of what's possible in music. You may want to bookmark blogs and channels that review new albums, they won't guarantee quality but you'll have wider field of view for what's coming out.

The version of What Will Come I downloaded was clipped terribly, declipping it thankfully helped a lot. Strangely Elfland was fine. Neither song is mixed or mastered great, of course. I can see the production as Varg following black metal's raw/DIY ethos using new technology, but that doesn't make it magically sound good. Dry digital production and terrible programmed drums suck, but I try to squint my ears and listen to what's being played to get value or at least understanding of the artist.
Burzum will always be noteworthy.
