There are plenty of good modern les pauls and plenty of good vintage ones. The most important thing is to play it first to make sure. The advantage of a new one, at least, is that some dilrod hasn't fucked with it yet.

Any of you guys have any experience with Fano guitars? A local shop picked up a used US made model and I’m tempted by it. It clicks every box for me: offset body, two P90s, hardtail bridge, 7.25 radius (actually 7.25 to 9.5 compound that feels really nice). $1200 out the door for it which is about on par for used US Fenders and when these are new they’re more than twice that. I’ve never owned a “boutique” guitar but this feels close enough to a Fender but has the P90 sound.
