Figure out what pieces you like, listen to them a lot, then branch out and listen to a different recording when curiosity strikes you. You have to develop taste yourself, and that will come naturally from familiarizing yourself with the music.

Dylan is the only serious answer. But I wouldn't say he's the Beethoven of the 20th century. He's the Machaut, who was sort of the culmination of medieval troubadours and shaped many after him. Well regarded enough that many of multiple countries copied and studied his music. Not just the French. That's who Dylan is like - a modern troubadour who shaped a lot after him and showed more possibilities with popular songwriting. There wouldn't even be a Michael Jackson writing some popular tune about surviving street gang violence if there wasn't a Dylan first. And Beatles would've still stuck with love songs.
